'Yet another fuc*king Pale Ale'
That is what I scrawled on my recipe notes.

In a brewshed behind a pub, an idea to mix Aussie and US hops in a West Coast IPA is born. The first version was Pride of Ringwood, Cascade and the then just released Simcoe. It was about 95% Ale malt with some crystal for body. Unusually for a 7% beer, there was no Dry Malt exctract, all malt and no fining. The yanks thought I was a crazy Aussie.

Everyone loved he flavor of Pride of Ringwood & Cascade in the dry hop and I loved the softer than normal bitterness on the front.

Simcoe Pride Cascade was a clunky name, but it was well received. However that note on the recipe sheet was right. I made so many different Pale Ales I didn't return to it for 15 years.

A whole collective sits around a brewshed talking about an IPA we could make in bigger batches. I was flipping back through my old Brewing notes. I spotted that snarky comment above notes about floral and passionfruit aroma and an oily, dank bitterness over light malt and a crisp finish. YAFPA was born.

We wanted an all grain IPA where the body and malt flavours were unique, but the hops were the real hero. A beer we could make in larger breweries that did not rely on difficult to scale techniques, only requiring dry hopping and a big mash tun.

We decided to use all Gladfield malt from NZ. Their American Ale malt and a bit of crystal for color and body. The flavours and consistent malt characteristics made that an easy decision.

The hop blend was harder. We settled on a blend of Galaxy and Warrior for bittering, so we could push the bitterness up without crossing the line between resinous and greasy. Sticking with the theme, we carried Galaxy through to the whirlpool addition, along with Mosaic, switching to some whole flowers but keeping the mix of Galaxy and Mosaic for the dry hop.

Fruity, a little spicy, front notes of fruit tingles over a surprising bitterness that falls off to a dry, malty and crisp finish with a lingering malty bitter aftertaste.

The very first batch is higher in bitterness than planned at 70 IBU, thanks to our stressing the brew house past it's upper limit and falling about 150 liters short of our target volume. We also had to drop the alcohol from the 7% target to 6.7% for the first batch. Although we have worked out how to push that up to 7 and will be keeping the higher bitterness, since it was so well received.

The name of our first YAFPA, well, why change a tradition? Galaxy Warrior Mosaic it was.

This is our first core beer, a simple malt bill that suits a broad range of hops. Expect to see seasonal hop blends as well.
